Come and get a table in one of the dining rooms to try out the Chefs’ dishes prepared with fresh seasonal and regional products. The Aube department displays a rich culinary and winemaking heritage that Le Val Moret hotel-restaurant wishes to uphold. Our restaurant is committed to promote local produce in its plates with a sense of elegance and refinement.

Lamb confit slowly cooked for 7 hours sourced from the local Taupin family farm, trout from Veuxhaulles-sur-Aube, Charolais beef raised in the surrounding meadows, mushrooms from Cussangy, pork from the cousin of the family, farm cheeses from Chaource or Champ-sur-Barse, pink biscuits from Reims are just one of the many delicious local specialities which can be found on the menu that comes with new variations every 2 months.

A creative cuisine

The Chef also draws inspiration from his origins. Born in Burgundy, he cooks soft-boiled eggs in different versions always with a little twist to create one of the most emblematic dishes of the menu: hot or cold, with a Champagne meurette sauce... Each soft-boiled egg recipe is unique.

 With a limitless sense of culinary imagination, the Chef designs themed menus around one product which comes in different textures from starter to dessert. Asparagus, tomatoes, Burgundy truffle are turned to a true masterpiece of flavours in the hands of this cook-magician.

As a proud ambassador of the Champagne vineyards, Le Val Moret takes pride in offering only local champagne from Côte des Bar, not to forget Coteaux Champenois, and Rosé des Riceys, the 3 Protected Designations of Origin in the region.
